The Godfather Jacques Chibois

Between Limousin, Périgord and Mediterranean influences, he signs a subtle, seasonal and masterful cuisine. Among his must-haves: the foie gras escalope with artichoke cream or the langoustine in orange pulp emulsion.

Thursday September 18, he will offer a chef's menu in the city's daycare centers and school restaurants.

The Brigade of 5 National Chefs

The brigade composed of Jeffrey Cagnes, Tabata and Ludovic Mey*, Aurélien Véquaud* and Sébastien Vauxion** will participate in many highlights: culinary workshops (reservations required soon), culinary demonstrations, culinary duos, not forgetting the gala dinner that they will organize together ! They will officiate alongside local chefs, porcelain makers, producers and artisans during the three days of the event.

Jeffrey Cagnes is a pastry chef and founder of the Jeffrey Cagnes House Paris. After having revived the oldest pastry shop in the capital and worked alongside Jean-François Trap, he opened his own boutique in the heart of the 17th arrondissement, 24 rue des Moines.

A year later, he opened a second address in his favorite neighborhood, rue Montorgueil, in the 2nd arrondissement. There, he shares a vision of pastry that is at once sincere, generous, open to the world and resolutely modern. embodies this new generation of chefs here respect traditions while asserting their own style with authenticity.

In 2023, he joined forces with the Cupra brand to open a unique boutique between Place de l'Opéra and Place de la Madeleine, an opportunity to fully express his creativity with pastries with Latin and oriental flavors. A way for him to pay homage to the sweets of the Mediterranean basin, which are particularly close to his heart.

In 2024, he is preparing the opening of his first boutique in the suburbs, in Levallois-Perret then in 2025, he inaugurates his first pastry workshop to pass on his passion to gourmets and enthusiasts.

Tabata, originally from Brazil, and Ludovic, born in Savoie, met in the kitchens of the brasserie Marguerite, in Lyon, from the chef Paul BocuseTheir shared passion for cooking gave birth to a beautiful love story… and a first restaurant, The Apothecaries, awarded a star.

Cramped in their first restaurant, they decide to embark on a new adventure with two addresses : Umbellule, a gourmet table with an Art Deco atmosphere, opened in September 2024 and already starred since March 2025, and the brasserie Reeds, a tribute to the great classics of French cuisine. Their cuisine is in their image: generous, creative and full of finesse.

Originally from Loire-Atlantique, Aurélien Véquaud quickly fell in love with the Mediterranean art of living. After training with great chefs such as Alexandre couillon in Noirmoutier and Olivier Brulard at La Réserve de Beaulieu, he became the hotel's executive chef in 2016 Belles-Rives in Juan-les-Pins and its Michelin-starred restaurant The Passenger.

His cuisine is inspired by seafood and local vegetables. Each dish is carefully designed, both subtle and precise. The food and wine pairings, imagined by its sommelier Aymeric Averdy fully participate in the experience of this beautiful southern address.

Sébastien Vauxion is a unique chef who has built a world of his own over the years. Immersed in the bakery and pastry business at a very early age thanks to his uncles in Orléans, he honed his talent alongside big names such as Philippe Conticini et Pierre Hermé where he discovers taste bold and masterful creations. His creativity would really explode some time later while working with Pierre Gagnaire.

Today pastry chef of the K2 Palace in Courchevel, with two Michelin stars, and he is the first chef to offer an entirely plant-based menu where the boundaries between sweet and salty disappear.
